(Makes approximately 25 patties)
4 cups corn meal
4 cups boiling water
Butter or animal lard for frying
2 teaspoons salt
Combine four cups of corn meal and two teaspoon of salt in a mixing bowl. While stirring, slowly pour in four cups boiling water, until the mixture is a smooth, thick dough without any lumps. In a large skillet, add about four tablespoons of lard or butter for frying on medium high heat. Shape the dough into flat, hand sized patties. You can cook four or five patties in the pan at a time. Fry each side until golden brown. Serve hot. These are sometimes called Ash Cakes.
